Chocolate Banana Peanut Butter Muffins
I don’t know about you but I can never seem to buy the perfect amount of bananas. If I buy one bunch of bananas it’s not enough, but if I buy two the second bunch just sits and rots away on the counter. This problem is how our 3 ingredient muffins came to be.
Now I am not big on cooking and baking, I mean I do it, but it’s not exactly my favorite thing to do. I cook to feed my family not because I particularly enjoy it. Because of this I usually opt for quick and easy any time I can. My daughter on the other hand has expressed a love for cooking. Any chance she gets she is the one in the kitchen at nine years old.
The inspiration for the 3 Ingredient Muffins
A couple years ago at a family gathering my husbands aunt had made pumpkin cake. It had just two ingredients a can of pumpkin purée and a box of yellow cake mix. I wanted to use that same concept but with bananas instead and figured it would be an experiment. Lots of trial and error to get it just right and since we always have so many left over when I buy too many, why not?
This weeks old bananas prompted our new experiment. I told my daughter I remembered that old, simple recipe and she said that she wanted to try it. So we headed to our local grocery store to pick up the cake mix since we already had the brown bananas. While I intended to buy a box of yellow cake mix my daughter asked if we could get the chocolate fudge cake mix instead and I figured why not. Chocolate and bananas sounds like a great combination.
Once home I had another idea, I asked her if she thought it would taste good with peanut butter in it. Since you know peanut butter is amazing. She said yes! So now to start the experiment.
- Preheat your oven to whatever your box of cake mix says. In our case it was 350 degrees.
- Mash bananas and add peanut butter
- Mix in entire box of cake mix
- Bake according to cake box ‘cupcake’ directions
3 Ingredient Muffins
These are seriously hands down the easiest 3 ingredient muffins I have ever made! And by “I” I mean my daughter. You know while I did laundry and checked in on her occasionally.
Somehow, our experiment ended up working flawlessly the very first time we attempted it. The muffins have more of a cakey texture than a dense banana bread one. They are really rich and have the perfect ratio of peanut butter to banana to chocolate.
Leila has claimed this to be her recipe since she ’invented’ it. Though I’m sure it’s been done somewhere before. But for my creative babe we not call them “Leila’s chocolate banana peanut butter muffins” long name but super simple and absolutely delicious!
